Repairs this series usually needs

  1. Knife motor that will not start, including the thermal overload
  2. Knife that shuts off while slicing
  3. Wedge-shaped slices from gauge plate or carriage alignment
  4. Automatic stroke that does not engage on the HS7 and HS9
  5. Noise from bearings or belt

The HS series covers Hobart’s heavy-duty gravity-feed slicers. The HS6 and HS8 are manual, the HS7 and HS9 are automatic with a keypad, and an N in the number marks the newer generation. The model number is on the data plate, and the full list includes HV versions.

Always unplug a slicer before cleaning or checking the knife, and never reach past the guards. If the knife motor will not start, we look at the thermal overload, the carriage position and the start switch. Wedge-shaped slices point to the gauge plate or carriage alignment, and a hard stroke in manual mode often means a dull knife or a dry slide rod.

A heavy-duty slicer that still cuts true after years of service is worth a fair look. We give a written price first, and if a gauge plate, carriage or motor is past a sensible repair, we say so before we start.

FAQHobart HS Series Manual and Automatic Slicers questions
What is the difference between an HS6 and an HS7?

The HS6 is manual, and the HS7 is automatic with a keypad. The same pattern holds for the HS8 and HS9, and an N in the number marks a newer generation.

Why does my slicer cut wedge-shaped slices?

The product may be unstable, or the gauge plate or carriage may be out of alignment. We check the alignment and the knife edge, and we adjust or replace what is worn.

Can the knife thermal overload be reset by me?

The owner's manual describes how the overload works, but if the knife keeps shutting off, there is a cause behind it. Unplug the slicer, leave the guards in place and call us.
