The KDP is a Doyon proofer and the KDPR is the retarder version. They come as roll-in and reach-in cabinets, numbered KDP11 through KDP33 and KDPR11 through KDPR33, plus the KDRP33. A retarder holds dough cold, and a proofer warms it.
On a proofer we check the water supply and the element first, then the thermostat, the humidity control and the door gasket. On a retarder we also check the refrigeration circuit. Humid weather changes how a proofer behaves, and hard water leaves scale that holds back steam.
Retarder proofers hold dough overnight, so a cooling problem can ruin a whole batch before anyone notices. You get a written price first, and we say plainly if a cabinet is not worth another repair.

Is a KDPR different from a KDP?
It marks a retarder proofer. The unit can hold dough cold and also warm it for proofing. The data plate carries the full model number.
Why does my proofer not reach humidity?
The water supply, a scaled pan or a weak element is the usual cause. We test the likely parts in order and report what we see.
How do I know a retarder is not cooling?
Dough rises when it should be held, or the cabinet feels warm in the morning. Check the display temperature and call us before the next overnight hold.
