Doyon’s KDP and KDPR proofers are roll-in and reach-in cabinets, with the KDPR adding retarder cooling. The DRIP and TLO roll-in proofers include the DRIP1, E236 and E336 families, and the DRP and DRPR line covers proofers and retarder proofers from the DRP1 to the DRP4S. Older DRP models are still in service in many bakeries.
When a Doyon proofer will not reach humidity, we check the water supply and fill, the water pan and the heating element. Steam that escapes through a worn door gasket is a common reason for low humidity, so we look at the seal too. On a retarder proofer that does not cool, the refrigeration system is the next place to look.
If the control shows a sensor message, we test the sensor and the control board before replacing either. Humid air and hard water both take their toll, with scale on the element and in the water line, and damp air on the electrical parts. Parts are confirmed ahead of the visit, the price is in writing, and our work carries a 30-day warranty.

What does the R mean in a Doyon KDPR proofer?
The R marks a retarder proofer. It cools dough as well as proofing it, so we also check the refrigeration side when a KDPR does not hold temperature.
