Anets Fryer Error Code HI: Hot Oil or Probe Reading
HI on an Anets AGP fryer with the digital controller can mean the oil has reached an unsafe temperature, or that the probe reading is incorrect. Turn the fryer off and let it cool well before turning it on again, and call a service company if the probe is the problem.
High: the oil may be unsafely hot or the probe unreliable, so the fryer should be off until it is checked.
What does Anets error code HI mean?
HI is one of two messages in the manual with a double meaning. The digital controller compares the temperature reported by its probe with a safety ceiling, and when the number goes past it the display shows HI instead of the normal temperature. The manual, in the digital controller table on page 30, gives two readings for the same message: the oil or shortening has actually become unsafely hot, or the probe is giving an incorrect reading. From the display alone you cannot tell which one you have, which is the practical difficulty with this code. The manual says to turn the fryer off and allow ample time to cool before turning it on, and if the probe reading is the problem, to contact a service company. It gives no cool-down time in minutes, so wait until the oil is clearly well below cooking temperature.
Affected models and control systems
Anets AGP series gas fryers (AGP55, AGP55T, AGP60, AGP60W and AGP75) with the digital controller, which shows the message as HI. The computer control shows the same two-meaning message as HIGH TMP on its own page.
Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.
What you may notice
- HI appears in the temperature display instead of a number
- The oil smells overheated or begins to smoke
- The burner stops until the fryer is switched off and cooled
Possible causes
Likely causes — what usually sits behind error code HI on this control. A technician confirms which one it is before any part is replaced.
- Oil heated far past its setting while the fryer sat unattended or without food
- Probe coated, loose or lifted out of the oil and reading high
- Burner gas valve staying open and overshooting the setpoint
Safe checks before calling for service
- Turn the fryer off and keep people and food away from the vat. Do not move or filter the oil while it is hot.
- Let the oil cool for a long time, until the vat is clearly no longer hot above the surface.
- Check the oil is at the marked line and the probe is not bent or caked with residue.
- Turn the fryer on once. If HI returns quickly with the oil cool, the probe reading is the likely issue; leave the fryer off and note how long it ran before HI showed.
How a technician diagnoses error code HI
- Ask whether the oil was truly overheated, then compare the display with a separate thermometer once the oil is safe to measure.
- Check oil level and condition, and the probe seating and mounting.
- Inspect the probe connector and test the probe's resistance against its curve at a known temperature.
- Check the burner gas valve and control circuit for a valve that sticks open, which would explain real overheating.
- Replace the probe or the failed control part only after the matching test.
- Real over-temperature means the burner kept firing past the setpoint, and finding why involves the gas valve and control circuit.
- Telling a bad probe from a hot vat needs a meter and a reference thermometer near hot oil, which is a burn risk.
How error code HI differs from similar codes
HI and HIGH TMP are the same two-meaning message on the two control types. Prob and PROBE OP OPEN are the probe-only messages.

Related Anets fryer error codes
Is HI always a real overheat?
No. The manual gives two meanings: the oil has reached an unsafe temperature, or the probe reading is incorrect. The display does not say which.
How long should I let it cool?
The manual says ample time and gives no number. We would wait until the oil is well below cooking temperature.
What if HI returns after cooling?
That points toward the probe reading rather than the oil. Leave the fryer off and have it checked.
