BCM and BLCM are Blodgett combi oven-steamers with manual controls and programmed cooking. The data plate number shows the size and the fuel: an E near the end means electric and a G means gas, as in BLCM-62E and BLCM-62G.
Water is a main concern on any combi oven. Scale builds in the steam supply, and the boiler on these models can be flushed to remove it. Water quality limits apply, so we ask what filtration is on the line. A weak steam supply, a door that will not seal and a gas model that will not light are the other problems we check.
