The H55 is an older high-efficiency 50 lb gas fryer that carried the Dean name. Look for H55-2 or H50 on the data plate. The control is either a CM III.5 computer or a Thermatron.
On these, we begin with the control and the probe, because a drifting probe makes the fryer look like it has a burner problem. Then we check the ignition, gas valve, high limit and flue. If the fryer has filtration, we check the pump, pad and O-rings too.
