Cres Cor makes insulated mobile cabinets that kitchens and bakeries use to hold food and proof dough. The older 120-PH and 121-PH are proof and hot cabinets, and we still see them in service. The H-137 and H-138 holding cabinets come in versions with an AquaTemp control for temperature and humidity, marked by a P in the model suffix. The 1000-HH and 750-HH are radiant holding cabinets, built to hold hot food rather than proof dough.
When a cabinet will not hold temperature, we look at the thermostat, the heating element and the door seal. When humidity is the problem, we check the water pan and the AquaTemp control. A worn gasket lets heat and moisture escape, and replacing it often brings the cabinet back to normal.
Cabinets that sit near a hot oven line or a steamy dish room age faster, because heat and moisture work on gaskets, wiring and controls. We check those parts as well as the one that failed.
These cabinets are rolled around kitchens daily, so damaged casters and door hinges are common, and we repair those too. Hard water leaves scale in water pans and on heating parts. If you are not sure which cabinet you have, tell us what it does and read us the model off its label, and we plan from there. On older cabinets we say plainly when a repair is not worth the cost.
