Nu-Vu Proofer and Oven Repair
We repair Nu-Vu proofers, oven-proofer combinations and bread cabinets, including older SUB-123 units, in Miami, Los Angeles, Houston, New York and San Diego. Tell us the model and what the cabinet does, and we plan the parts before the visit.
Common Nu-Vu problems we fix
In plain words, the way kitchen and laundry staff describe them when they call.
Proofer is not heating
No humidity from the cabinet
Door latch or gasket leaks
Thermostat or high limit trips
Automist or autofill not working
Nu-Vu’s PRO series are proofers with mechanical controls, in a half-size counter version, the PRO-8, and full-size floor versions such as the PRO-16. The PROW series adds Automist humidity and a connection for an automatic water fill, with models such as the PROW-8, PROW-16 and PROW-18. In the PRO series the water pan sits in the bottom and is filled by hand.
The QB and QBT combinations put a convection oven over a proofer, with Automist proofing on the QBT, and the QB-3/9, QB-4/8 and QB-5/10 are among the models we see. We also work on the CR18 and HCR18 bread cabinets, and older SUB-123 and SUB-123P proofers that are still in use.
When a proofer will not heat, we check the thermostat, the high limit and the element. Humidity that does not appear points first to an empty water pan, and on an Automist or autofill model to the water supply and the Automist system. A door latch that does not close or a worn gasket lets heat and moisture out. Hard water leaves scale on the water pan and heating parts, which cuts steam output over time.
The cabinets work at the same station every day, so a proofer that fails slows the whole bake. Tell us the model on the label and what you see, and we plan the visit around it. A photo of the control panel helps when you call.
On an older SUB-123 we say plainly when a repair is not worth it. The written price comes first, and a 30-day warranty stands behind the repair.

The PRO has a manually filled water pan. The PROW adds Automist humidity and an autofill connection. Knowing which you have helps us check the right parts.
Why is my Nu-Vu proofer not making humidity?
An empty water pan is the first thing to check. If it is full, we test the heating element and, on PROW models, the Automist and autofill system.
Do you repair the oven part of a Nu-Vu QB or QBT combination?
Yes. We service both the oven and the proofer in the QB and QBT combinations, so one visit covers both, and you get a written price before any work starts.
