Repairs this series usually needs

  1. Proofer that does not heat
  2. Humidity that is not produced when the water pan is empty
  3. Door latch or gasket leaks
  4. Thermostat or hi-limit trips

The Nu-Vu PRO series are proofers with mechanical controls. The PRO-8 is a half-size counter model and the PRO-16 is a full-size floor model. A water pan sits at the bottom and is filled by hand, so an empty pan means no humidity.

When a PRO does not heat, we check the thermostat, the hi-limit and the heating element. When humidity is missing, the first thing to check is the water in the pan. We also look at the door latch and gasket, since a leaking door loses both heat and moisture. Hard water leaves scale in the pan, and humid weather changes how a cabinet behaves.

Mechanical-control proofers are simple, so repairs are usually worthwhile. You get a written price first, and we tell you honestly when a unit is not worth fixing.

FAQNu-Vu PRO Series Manual-Fill Proofers questions
How is the water pan filled?

By hand. The PRO series has a bottom-mounted pan that you fill yourself, so check the water level first whenever humidity seems to be missing.

Why does my proofer not heat?

The thermostat, hi-limit or element may need attention, and we check each. A dry or scaled element can also be the reason, so we look at those first, and we give a written price before ordering a part.

What does the hi-limit do?

It is a safety thermostat that shuts off heat if the cabinet gets too hot. If it trips repeatedly, the thermostat or element needs a look.
