The MST is the Turbo Air Mega Top prep table, with plate numbers such as MST-24S-N6, MST-28-12-N and MST-28-N. The number gives the width and sometimes the pan count. Fourteen numbers are in the family.
The controller has a set point, and its keys lock after one minute without use. A lit key-lock light is normal, and pressing U for two seconds unlocks the keys. When a table runs warm, we check the lid and the gasket first, then the condenser and the fans, then the sensor. We also look at how pans are loaded, since pans that stand above the rail block the cold air.

They lock after one minute without use. Press U for two seconds to unlock them, then change the set point. The lock is a normal part of this control.
How should pans be loaded?
Keep them level with the rail and do not stack above it. Pans that stand too high block cold air and warm the food. Check that the lid closes fully afterward.
What does the mega top mean?
It is a deeper pan rail that holds more toppings. The cabinet below is similar, and we confirm the parts from the plate. The extra depth changes the lid.
