The PST is Turbo Air’s pizza prep table, and the list holds 103 numbers, such as PST-28-12-N, PST-28-12-D2-N and PST-48-18-N. The controller shows lights for the compressor, defrost, evaporator fan, key lock, door open and alarm, which gives us a quick view of what the table was doing.
The compressor turns on at 38 F return air and off at 34 F, so a table that cycles in that range is normal. Flour and cheese dust clog the condenser, and the drain hose can slip out of the pan and leave water on the floor. We check both, and the self-cleaning condenser models still need a nitrogen blow-out once or twice a year. We confirm the plate number first so gaskets and drawer parts are on the truck.

Why is there water under my PST?
The drain hose may have slipped out of the drain pan. We put it back and check the pan and the line. Check that the hose points into the pan.
