The Nu-Vu SUB-123 and SUB-123P are older proofers that bakers still use. Some versions can show a SENSOR message on the display, which tells us to look at the temperature sensing.
When one of these will not heat, we check the thermostat, the hi-limit and the element. When humidity is missing, we check the water pan, and the Automist or autofill parts if the unit has them. The door latch and gasket matter too, because a leaking door loses heat and moisture. Parts for an older design take effort to confirm, so we do it before the visit.
