Merrychef High-Speed Oven Error Code E106: Cavity Overheated

E106 means the cavity thermocouple read 25 C above the set point after the set point was reached. The manual says to check the convection fan speed and rotation, the thermocouple fitting, and for a product fire in the cavity.

Medium · inspection needed

High: the cavity temperature exceeded the set point by 25 C and the oven protects itself.

What does Merrychef error code E106 mean?

E106 is created by the oven software rather than by a hardware switch. After the cavity reaches the temperature you set, the oven keeps watching the thermocouple. If the reading climbs 25 C above the set point, the oven records E106: CAVITY OVERHEATED. The most direct reason for the temperature to run away is poor air movement, so the manual's first check is the convection fan speed and rotation. A stalled convection fan lets heat build up around the element. The second named cause is a loose thermocouple. If the thermocouple is not well fitted, it can read incorrectly, or the real temperature may be higher than shown. The third check is for a product fire in the cavity, where food or packaging is burning and driving the temperature up. If the cavity looks safe, the technician works through the fan and the sensor.

Affected models and control systems

Merrychef eikon e2s with the QTS touch screen and SRB relay board controller. Confirmed in the e2s service manual.

What you may notice

  • E106 CAVITY OVERHEATED on the display
  • Cavity much hotter than the set temperature
  • Burning smell or smoke if food has caught fire

Possible causes

Listed in Merrychef's documentation

  • Stalled convection fan
  • Loose thermocouple

Other likely causes — what usually sits behind error code E106 on this control. A technician confirms which one it is before any part is replaced.

  • Heater circuit staying on after the set point is reached
  • Thick food residue baked on the fan housing slowing airflow
  • A thermocouple whose tip has moved away from the correct position

Safe checks before calling for service

✓ What an operator can do
  1. If you see flames or smoke, keep the door shut, switch the oven off and follow your kitchen fire procedure.
  2. Otherwise let the cavity cool fully before looking inside.
  3. Remove any burned food from the cavity once cool.
  4. Note the set point, the food and how long it was cooking.

How a technician diagnoses error code E106

  1. Read the log for the temperature reading and set point at E106.
  2. Run the convection fan and check speed and rotation.
  3. Inspect the thermocouple fitting and wiring.
  4. Check that the heater turns off at the set point; see E102.
  5. Fix the fan or sensor and run a monitored heat-up.
! Leave this to a technician
  • An overheating cavity with a possible fire risk is not something to test by hand.
  • Checking the fan, sensor and heater switching requires the oven opened and monitored in service mode.

How error code E106 differs from similar codes

E106 is a software overheat above the set point; E104 is the hardware safety thermostat circuit opening.

E106Questions about Merrychef error code E106
Could E106 mean there was a fire?

The manual lists a product fire in the cavity as something to check. If you see flames or smoke, treat it as an emergency.

Is the thermocouple always at fault?

Not always. A stalled convection fan is listed first, then the thermocouple fitting.

Can I reset it and keep cooking?

Not without finding the cause. A repeat overheat damages parts and food.
