Wolf griddles come in several families. AGM and ASA are heavy duty gas griddles from 24 to 72 inches, with manual or snap action controls. The WEG series is electric. The TYG models are teppanyaki gas griddles, and Challenger XL ranges carry a thermostatic griddle section lit from a standing pilot, just like the oven.
On a gas griddle that will not heat, we start with the pilot, the thermocouple and the safety valve, then the thermostat. A yellow or lifting flame sends us to the burner, the air shutter and the gas pressure. Uneven heat can also come from a warped plate, grease built up under it, or a clogged trough.
On a WEG electric griddle, we test the heating elements and the thermostat. Thermostat calibration drifts after years of heat cycling, and we check it against a reading on the plate. Older griddles are repaired when the plate and the burners are sound, and we say plainly when a griddle has aged past a sensible repair.

Why does one side of my griddle run cooler?
Plate warping, a weak burner, a thermostat that drifts or grease under the plate can do it. We check the burners first and then the thermostat.
Does the griddle on a Challenger XL range use a pilot?
Yes, a standing pilot that is lit like the oven pilot. If it will not stay lit, we check the thermocouple and the safety valve.
