Common Wolf Commercial ranges problems
In plain words, the way kitchen and laundry staff describe them when they call.
Standing pilot goes out
Burners will not light
Oven too hot or too cold
Oven door or flue problem
Convection fan does not run
The Wolf ranges we service include the Challenger XL in sizes from C24 to C72, where an S in the model means a standard oven and a C a convection oven. We also see WX series ranges, AHP countertop hotplates, the stockpot range and the salamander broilers. Convection ovens run their fan on a 120-volt cord.
Pilots are monitored by a thermocouple and a pilot safety valve. If a pilot is out, the maker’s relight procedure has a waiting period before relighting and a safety button to hold, and we follow it. We check the main gas valve, the burner assembly and the oven thermostat. Oven thermostat calibration is a job for a technician.
Uneven baking can come from a range that is not level, a blocked flue or a regulator off its rating, and we check manifold pressure against the plate. Service also needs clearance at the front, so a range pushed tight against the wall is something we ask about before the visit.

S marks a standard oven and C a convection oven. The letters and numbers also show the width and the top layout, so read the whole number to us.
Can I relight a standing pilot myself?
The owner's manual explains the relight steps, including a waiting time and holding the safety button. If you smell gas, leave the building and call the gas utility from outside.
Why is my Wolf oven baking unevenly?
A range that is out of level, a poor flue draw or gas pressure off the plate rating can all do it. We check each one in turn.
