What does Convotherm error code E81.0 mean?

Each cooking program in a combi oven is stored as a cooking profile, which tells the control what temperature, humidity, fan speed and time to use in each step. When you start a program, the control loads the profile and checks that it makes sense. If the data cannot be run as written, the oven shows E81.0 Cooking mode error instead of cooking. The error belongs to the program, not to the hardware: the heating, the fan and the steam parts are untouched, and other profiles on the same oven often still work. That points to damaged or incomplete profile data, for example from a save that was interrupted or a transfer that did not finish. The manual's response matches this: write the cooking profile again, so the control gets a clean copy. If a freshly written profile still gives E81.0, the stored data or the memory it sits in may be the failed part.

Affected models and control systems

Convotherm 4 (C4) floor-standing combi ovens as described in the UL / USA operating manual. The text we read does not name table-top or maxx pro units.

Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.

Safe checks before calling for service

✓ What an operator can do
  1. Note which program you started when E81.0 appeared.
  2. Open that program and write the cooking profile again, entering the steps and values from your recipe sheet.
  3. Save it fully and wait for the save to finish before cooking.
  4. Run the program once to see whether E81.0 clears.
  5. If it comes back, contact Customer Service and note which profiles are affected.

How a technician diagnoses error code E81.0

  1. Read E81.0 and the history and identify the affected profile.
  2. Compare the profile with another program that runs correctly.
  3. Delete and re-enter or re-import the profile from a known good copy.
  4. Check that the control software version is current for the oven.
  5. Look for repeated power interruptions that could corrupt saved data.
  6. Replace the memory or control board only after a rewritten profile fails again.
! Leave this to a technician
  • Restoring or reloading the oven's stored programs takes service software and the oven's own data, which an operator should not overwrite.
  • Checking whether a board is damaged means working inside the control compartment at line voltage.
  • A repeated error across several profiles points to the control itself, which is a technician's decision.
