Henny Penny OFG-391 Fryer Error Code E-6B: Probe Shorted
E-6B means the temperature probe is shorted. Turn the switch off, then on. If E-6 still shows, have the temperature probe checked.
High: the controller cannot read the oil temperature, so the fryer stops heating.

What does Henny Penny error code E-6B mean?
The oil temperature probe changes its resistance as the oil heats, and the controller reads that resistance. When the probe or its wiring is shorted, the resistance falls far below what any real temperature produces, and the controller cannot trust it. On the Henny Penny OFG-391 open gas fryer it then shows E-6B, a temperature probe shorted alarm. A controller that believed the short would think the oil was extremely hot, so it stops and alerts rather than guess. The manual's action is the same as for the open version: turn the switch off, then on, and if E-6 still shows, have the temperature probe checked. A wire pinched against the fryer frame or oil getting into the probe connector can create a short without the probe being obviously damaged. The B in the code separates this from E-6A.
Affected models and control systems
Henny Penny OFG-391 open gas fryer. The manual copy we used is a text viewer copy of the Henny Penny manual. E-6B is the shorted form of the E-6 probe alarm.
Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.
What you may notice
- E-6B on the controller
- Fryer stops heating
- Oil temperature reading missing or odd
- Burner off
Possible causes
Listed in Henny Penny's documentation
- Temperature probe shorted
Other likely causes — what usually sits behind error code E-6B on this control. A technician confirms which one it is before any part is replaced.
- Probe wire pinched against the fryer frame
- Oil or moisture in the probe connector
- Insulation of the probe lead worn by heat
Safe checks before calling for service
- Turn the switch off, wait a moment and turn it on.
- Check that the fryer and oil are cool before touching anything.
- If E-6 still shows, do not try to heat the fryer.
- Note E-6B and call us for a temperature probe check.
How a technician diagnoses error code E-6B
- Read the code and confirm E-6B, not E-6A.
- Turn the switch off and on.
- Inspect the probe wire for pinches.
- Measure probe resistance.
- Replace the probe if it is shorted.
- The probe sits in hot oil, so work on it needs a cooled fryer and proper handling.
- Wiring checks involve gas-fryer controls and line voltage.
- A short can be in the wire or the probe, which only a meter shows.
How error code E-6B differs from similar codes
E-6B is the shorted probe alarm; E-6A is the open probe alarm.

Is E-6B more serious than E-6A?
Both stop heating. The controller cannot trust the reading in either case.
Is the oil really overheated?
The reading looks hot to the controller, but a shorted probe is the usual reason.
What should I do?
Turn the switch off and on once, then have the probe checked if E-6 returns.
