The Doyon CA series is the Circle Air line of rotating rack-style convection ovens, in 6 and 12 pan sizes. The CA6X sits on a stand and has a programmable control with 32 recipes, and the CA6PX is a proofer base. Look for the model number on the data plate, where a G marks a gas oven.
We check whether the rack turns freely first, since a rack that stops causes uneven bakes. Then the convection fan, the burner or elements, the control and the temperature sensor. The door gasket is checked for the wear that summer heat and steam cause.
The rack turns on a Circle Air, so rotation is a key check on every visit. The price comes in writing before we start, and if the oven is beyond a sensible repair, we say so.

What does the CA6X recipe memory do?
It stores up to 32 programmed recipes. If the control goes dark or loses a setting, we test the board and sensor before replacing anything.
