A Doyon oven-proofer combination stacks a convection oven over a proofer. The JAOP models use a Jet Air oven and the CAOP models use a Circle Air oven. The model numbers include JAOP3, JAOP6, JAOP6G, JAOP6SL, JAOP12, JAOP12SL, JAOP14, JAOP14G, CAOP6, CAOP12, CAOP6G and CAOP12G. A G marks gas and SL marks side loading.
Because it is two machines, we check both. For the oven we look at heat, fan, burner or elements and the control. For the proofer we check the water supply, the pan, the element and the thermostat. Hard water leaves scale in a proofer, and humid weather changes how it behaves.
Because one visit has to cover two machines, we confirm parts for both. A written price comes first, and we say plainly if either unit is past a sensible repair.

OP means oven proofer. The first letters show the oven type, JA for Jet Air and CA for Circle Air. The data plate carries the full number.
Why will my proofer not reach humidity?
The water supply, the pan, the element or the thermostat may need attention, and we start with the water. Scale and a dry pan are common, so that first look pays off.
