If one side of the plate is cooler than the other, we look at the burner under that side and the thermostat for it. A thermostat knob that no longer changes the heat means the thermostat or its valve has worn out. We also look at the plate for warping, and for grease and carbon buildup that creates hot and cold spots.
Grease and humid air shorten the life of pilot tubes and valves, and clean burner ports make a real difference. If you smell gas, get out of the kitchen first, then call the gas utility.
