LBC’s LRP roll-in proofers come in single, double and triple-wide versions from 30 to 240 inches deep, and the P in a name marks a pass-thru. They use PID controls mounted in the door. The LRPR retarder proofers add a 24-hour timer, with the condenser built in or remote, and the LMO-P is a mini proofer base under the LMO ovens.
These controls use alarm settings. The oT alarm is a heat timer that can sound if the proofer is slow to heat, the oH alarm is an upper humidity limit, and oL turns the alarm on or off. If the proofer will not reach the set temperature, we check the element, the sensor and the alarm settings themselves. If the humidity overshoots, we look at the water fill and the humidity control.
The controls also keep a clock, which can be lost after a power outage, so a clock that shows the wrong time is often a power matter. A retarder that does not cool sends us to the condenser or remote condenser. We give you a written price first, and we say plainly if an older cabinet is not worth fixing.
