Doyon Ovens and Proofers We Repair
Doyon’s SRO signature roll-in rack ovens come in single and double versions, gas or electric. The CA Circle Air ovens are rotating convection ovens in 6 and 12 pan sizes, and the JA Jet Air line is stationary convection ovens from 4 to 28 pans. Oven-proofer combinations such as the JAOP6 and CAOP12 stack a proofer under the oven, and the PIZ3 and PIZ6 are stone deck pizza ovens.
For proofing we see KDP and KDPR roll-in proofers and retarder proofers, DRIP and TLO roll-in cabinets, and DRP and DRPR proofers. The R in a model name marks a retarder proofer, which also cools.
First Checks
An oven that heats unevenly sends us to the fan, the burner or the element. A gas oven that will not light points to the ignition system, and if you smell gas, leave the building and call the gas utility from outside. A dark control or the wrong temperature leads us to the sensor and the board, and a worn gasket explains heat loss at the door. On rotating models we check the rack drive.
A proofer that will not reach humidity needs the water supply, the pan and the element checked, and a retarder that does not cool needs its refrigeration looked at. We say plainly when an older Doyon is not worth repairing, and we give a written price before work and a 30-day warranty.

Do you repair Doyon KDP and DRP proofers?
Yes. We service KDP, KDPR, DRP, DRPR and the DRIP and TLO roll-in proofers. We check the water supply, the element and the door gasket first, then give you a written price.
