Alto-Shaam Combi Oven Error Code E21: N6 Cavity Probe Failure
E21 N6 Cavity Probe Fault means the cavity temperature probe, N6, is defective or disconnected. Press the Start icon to acknowledge it, and call a technician to check N6 and its wires.
High: without the cavity probe the oven cannot control heat, so cooking stops.

- Combitherm CT PROformance (CTP) and CT Classic (CTC); Combitherm CT Express / ESi / CCi (older 4-10 and 4.10 units; boiler or generator electric/gas)
What does Alto-Shaam error code E21 mean?
The cavity probe N6 tells the control how hot the oven chamber is, and every convection or combination program relies on it. The control reads N6 as a resistance that changes with temperature, so a missing, broken or shorted probe gives a value outside the range it can believe. When that happens the control posts E21 N6 Cavity Probe Fault. The manual gives two causes: the N6 probe has failed, or its wires have come disconnected. Because the oven cannot control heat without this reading, it will not simply carry on. Pressing Start acknowledges the message and the oven then tries to return to normal operation, but the same reading problem returns at the next heat call. Do not confuse E21 with E11, where N6 is working and reads a temperature above 600 F (315 C) for at least 25 seconds; here the probe has no usable reading at all.
Affected models and control systems
All six CTP and CTC sizes (6-10, 10-10, 7-20, 10-20, 20-10, 20-20) in electric and gas. CT Express ovens print an identical E21 entry in their own manual.
Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.
What you may notice
- E21 N6 Cavity Probe Fault on the display
- Oven refusing to heat or stopping a heat-up
- Temperature display showing dashes or a wrong value
Possible causes
Listed in Alto-Shaam's documentation
- N6 probe malfunction
- N6 wires disconnected
Other likely causes — what usually sits behind error code E21 on this control. A technician confirms which one it is before any part is replaced.
- A pinched or heat-damaged probe cable at the cavity wall or at the connector behind the panel
- Moisture inside the probe connector from steam and cleaning spray
Safe checks before calling for service
- Press the Start icon once to acknowledge E21.
- Turn the oven off and let it cool.
- Do not spray inside the back wall with high-pressure water; note whether the code started after a wash.
- If E21 returns, tell the technician whether the oven was recently cleaned or moved.
How a technician diagnoses error code E21
- Read the code and ask about cleaning or moving the oven before the code appeared.
- Inspect the N6 probe and its cable path for damage with the oven cool.
- Check the connector for corrosion or looseness.
- Measure the N6 resistance and compare with the chart at room temperature.
- Replace the probe or repair the wiring after the measurements show an open or short.
- N6 sits inside the cavity and its harness runs into a live control area.
- An open or shorted sensor cannot be told from a loose connector without a meter.
- Heating without a working cavity probe could overheat the oven, so it should not be run to test.
How error code E21 differs from similar codes
E11 is the cavity temperature reading too high; E21 means the cavity probe cannot be read.

Can I use the oven with E21?
The oven tries to return to normal operation, but without N6 it cannot control temperature safely.
Is E21 the same as E11?
No. E11 is a high reading from a working probe.
Could cleaning cause E21?
Moisture in the probe connector is plausible, but the manual lists only a failed probe or disconnected wires.
