The Combitherm Family
Alto-Shaam builds the Combitherm combi oven, and we repair the whole family. The CT PROformance has the PROtouch control and the CT Classic has a manual control. Both come as countertop and roll-in ovens, in boiler-free electric or gas versions and in steam generator versions. Model numbers start with the pan count and size, such as CTP10-20E or CTC7-20G. Older units include the CT Express, such as the 4-10ESi, and the ES and ESi ovens in 6.10, 10.10 and 20.20 sizes.
Water, Fans and Gas Ignition
A low water message or weak steam starts with the water supply valve, the inlet filter and line pressure, then scale on the level probe. A steam generator that will not drain usually has scale or a clog in the drain path. Control board temperature messages lead us to the cooling fan and a clogged intake, and fan or drive errors lead us to the fan wheel and the drive itself. A washable filter that is not seated properly can also trigger an error at start-up, so check that it is fully in place.
If gas is ever in the air, get everyone out and call the gas utility from outside. On gas models the oven lights with a hot-surface igniter and watches the flame with a sensor. If it fails to ignite three times, stop using it and call us.
Older Ovens
Hard water and humid kitchens are tough on steam ovens over the years. We tell you plainly when an older Combitherm is not worth repairing, and we give you the price in writing first. Repairs carry a 30-day workmanship warranty.

Why does my Combitherm say it is low on water?
Check that the water supply valve is open and the filter is clean. If the message stays, the cause may be low line pressure or scale on the level probe, which we test during the visit.
What should I do if my gas Combitherm will not light?
After a third failed ignition, stop using the oven and call us. Do not keep restarting it. Should gas ever be in the air, leave the building and call the gas utility from outside.
