Frymaster 3000 Fryer Error Code E27: Low Temp Alarm

LOW TEMP ALARM (E27) on a Frymaster OCF30 series electric fryer with the 3000 controller means the oil dropped 30F (17C) below setpoint in idle mode or 45F (25C) below setpoint in cook mode. It can happen if product is dropped and START COOK is not pressed right away, or if the load is too large. If it repeats, check the heating.

Medium · inspection needed

Low: usually an operator cause; the fryer keeps running unless it repeats under normal loads.

What does Frymaster LOW TEMP ALARM mean?

The 3000 controller watches how far the oil temperature is from setpoint. In idle mode it sounds LOW TEMP ALARM when the oil falls 30F (17C) below setpoint. In cook mode the limit is 45F (25C). A big drop usually means cold product has absorbed the heat, but the controller does not know why the drop happened, so it raises E27. The manual lists two causes. The first is product dropped without pressing START COOK promptly, so the controller still treats the vat as idle while the oil is falling. The second is a cook load that is too large for the vat to hold its temperature. Both are operator causes, and the alarm often disappears if they are corrected. If it repeats under normal loads, the manual says to check heating, which means a technician should look at the elements, the contactor and the supply.

Affected models and control systems

OCF30 series electric fryers (FPEL30 series) with the 3000 controller. The same code is in the 3000/3010 Controller Operation Manual.

Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.

What you may notice

  • LOW TEMP ALARM on the controller
  • Alarm sounding while product is in the oil
  • Oil temperature well below setpoint
  • Product coming out greasy

Possible causes

Listed in Frymaster's documentation

  • Product dropped without pressing START COOK
  • Cook load too large

Other likely causes — what usually sits behind LOW TEMP ALARM on this control. A technician confirms which one it is before any part is replaced.

  • A heating element that is delivering less than its full output
  • A supply voltage that sags when the fryer works hard
  • A temperature probe that reads slightly high, so the controller heats less than it should

Safe checks before calling for service

✓ What an operator can do
  1. Press the cook button as soon as the basket goes in.
  2. Use smaller loads and let the oil come back up between batches.
  3. Check that the oil level is correct.
  4. If the alarm repeats under normal loads, note the load size and call service.

How a technician diagnoses LOW TEMP ALARM

  1. Review the error log for repeated E27 events.
  2. Time a normal load and compare recovery with the limits.
  3. Measure supply voltage and element current under load.
  4. Check the contactor and the temperature probe.
  5. Repair the heating problem only after the measurement shows a shortfall.
! Leave this to a technician
  • Measuring current and voltage under load is live work on 208 to 240 V.
  • Element and contactor replacement requires lockout and handling of the vat.
  • A probe that reads wrong and a weak element give the same alarm.

How LOW TEMP ALARM differs from similar codes

On the 3000 controller the limits are 30F idle and 45F cook; older notes with a 15F idle figure refer to the M3000 table, not this controller.

LOW TEMP ALARMQuestions about Frymaster LOW TEMP ALARM
Is the alarm always a problem with the fryer?

No. The manual lists dropping product without pressing START COOK, and a load that is too large.

What are the temperature limits?

30F (17C) below setpoint in idle mode and 45F (25C) below setpoint in cook mode.

What if it keeps coming back?

Check the heating, as the manual says, since the fryer may be losing capacity.
