Pitco Commercial Fryer Error Code HI: Oil Too Hot
HI on a Pitco Solstice computer or digital controller means the oil or shortening has reached an unsafe temperature, or the probe reading is incorrect. Turn the appliance off and allow ample time to cool before turning it on. For an incorrect probe reading, contact a service company.
High: oil at an unsafe temperature, or a probe that can no longer be trusted, is a fire and burn risk.
What does Pitco error code HI mean?
The controller watches the oil temperature and has an upper limit for safety. If the reading goes past it, the display shows HI. Two situations are given. In the first, the oil is truly too hot, for example because the heating did not shut off at the set point. In the second, the probe is reading incorrectly, so the HI is false. The two look alike on the display, which is why the manual gives two actions. If the oil is hot, turn the appliance off and let it cool for a good while before restarting. If the reading is wrong, a technician must check the probe. The operator should never carry on cooking when HI appears, and should not move or drain hot oil. Hot oil near the limit can ignite, so the cooling step is the main safety instruction.

Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.
What you may notice
- HI on the display
- Oil far hotter than the set point
- Fryer shutting off or refusing to restart until cool
Possible causes
Likely causes — what usually sits behind error code HI on this control. A technician confirms which one it is before any part is replaced.
- Oil or shortening at an unsafe temperature
- Probe reading incorrect
- Heat control relay or gas valve staying on past the set point
- Probe reading low so the controller keeps heating
- Fryer run empty or with too little oil
- Very low oil level exposing the probe
Safe checks before calling for service
- Turn the fryer off and keep clear of the vat.
- Let the oil cool for ample time before restarting.
- Check the oil level is above the minimum fill line before turning on again.
- If HI returns, call us and give the model and what the oil was doing.
How a technician diagnoses error code HI
- Confirm HI and check the actual oil temperature with a thermometer.
- Test the probe against the thermometer.
- Check the hi-limit and the heat control circuit.
- Check the gas valve and relay for sticking.
- Replace the probe or control part and run a monitored heat-up.
- Hot oil near its limit is a fire and burn hazard, and the heat controls involve gas and live circuits.
- Comparing the probe to a thermometer must be done safely at temperature.
How error code HI differs from similar codes
HI is an over-temperature display; HEAT FAIL and Prob messages are about heat not arriving or the probe circuit being open or shorted.

Is HI always dangerous?
Treat it as dangerous until proven otherwise. The oil may really be too hot, or the probe may read wrong.
What should I do first?
Turn the appliance off and allow ample time to cool.
Could it be the probe?
Yes. The manual says that for an incorrect probe reading you should contact a service company.
