Which Pitco Fryers We Work On

Most of our Pitco calls involve the Solstice family. The SG tube fryers come in 14 and 18 inch widths, the SGH50 is a 50 lb system, and the Solstice Supreme SSH units cover the 55 to 75 lb class. The electric SE fryers are sold with or without built-in filtration. Any of them can have a Computer, Digital or Solid State control, so we identify the control before anything else.

A gas fryer pulls grease-laden air through the burner area all day, and that film settles on the burner and the controller. In humid kitchens, such as those in Miami and Houston, the buildup turns sticky and slow heating or lockouts often follow. Dry heat in Los Angeles and San Diego kitchens dries the film into a crust, which does the same job on the pilot.

How a Pitco Diagnosis Goes

The controller runs on 24 volts AC, and the pilot should stay lit whenever the controller is on. When the display reads HEAT FAIL or IGNITION FAILURE, we check the pilot, then the ignition module, then the gas supply. A roll-out switch high limit that has tripped has to be reset by hand, followed by turning the controller off and on. If it trips again, something is overheating the oil and we track that down.

DRAINING / TURN OFF points us to the drain valve switch, where the proximity gap matters. We also check oil level, since running under the minimum line can trip the element or the high limit. On an older fryer you get a straight answer about repair versus replacement, a written price first, and a 30-day warranty on our work.

FAQPitco questions
What does HEAT FAIL mean on my Pitco fryer?

The control did not see the fryer heat up the way it expected. On a gas Solstice we check the pilot, ignition module, gas supply and high limit. If you smell gas, leave the building and call the gas utility from outside; otherwise make sure the gas valve is open.

How do I reset a Pitco high limit that tripped?

Let the oil cool completely first. The roll-out switch resets by hand, and then the controller is turned off and on. If the limit trips a second time, stop using the fryer and call us so we can find out why it overheats.

Why does my Pitco show DRAINING / TURN OFF?

The control believes the drain valve is open. Either the valve is not fully closed or the switch gap has shifted. We check both before ordering a part.
