The Ultra-Max 800 series MA griddles are Star’s manual gas griddles. The model on the data plate has the size in front, such as 824MA or 872MA. Each uses manual valves and a standing pilot that is lit after the gas is turned on.
Burner input rises with the size: 60,000 BTUH on the 824, 90,000 on the 836, 120,000 on the 848, 150,000 on the 860 and 180,000 on the 872. The griddle is set up for natural gas or propane, and we confirm which one before any work.
The calls we see are a pilot that goes out, a burner that will not light and uneven heat across the plate. We clean pilot and burner parts, check the gas supply and look at the valves. Treat any gas odor as urgent and call the gas utility from outside.

The first digits of the model number give the size, so an 836MA is a different size from an 872MA. The data plate also lists the gas type.
The pilot keeps going out. Can you fix it?
Yes. We check for a dirty pilot, a weak safety part and a draft, and a gas odor sends you outside to call the utility first.
Can a manual griddle be converted between natural gas and propane?
The griddle is set up for either gas, and we confirm which one yours is. We do not change gas settings without checking the data plate.
