The T and TA griddles in the Ultra-Max 800 series have a snap-action thermostat instead of a manual valve, so the burners cycle on and off to hold the temperature you set. The snap-action models have no standing pilot. The data plate number, such as 836TA or 860T, gives the size and the control.
Burner input follows the size, from 60,000 BTUH on the 824 up to 180,000 on the 872 for the TA models. When one of these does not hold temperature, we check the thermostat and the snap-action valve. If it will not light, the gas supply and the ignition are next. Uneven heat leads us to the burners.
If gas is ever detected by smell, step out and call the gas utility. A written price comes before work.

The snap-action thermostat controls the gas without a standing pilot. If the griddle will not light, we check the gas supply and the ignition parts, not a pilot flame.
My griddle will not hold temperature. Why?
The thermostat or the snap-action valve is the usual suspect. A reference thermometer checks both of them, and no part is replaced until you have seen the price.
