Hobart Meat Slicer Repair
We repair Hobart HS series slicers, both manual and automatic, plus the portion-scale versions and older EDGE slicers, in Miami, Los Angeles, Houston, New York and San Diego. We tell you the written price before the work begins.
Common Hobart slicers problems
In plain words, the way kitchen and laundry staff describe them when they call.
Knife motor will not start
Knife shuts off during slicing
Wedge-shaped slices on the deli counter
Manual slicing feels hard and stiff
Automatic stroke does not engage
Grinding or rubbing noise
The Hobart HS series is a gravity-feed line. The HS6 and HS8 are manual, the HS7 and HS9 are automatic with a keypad and control board, and the N versions are the newer generation. Portion-scale models such as the HS6-1PS and HS7-1PS add a scale, and older EDGE12 and EDGE13 slicers are still working in many delis.
If the knife motor will not start, we begin with the incoming power, the thermal overload, whether the carriage is at its home position, and the start switch. On automatic models we also test the keypad, capacitor and control board. A knife that stops partway through a job usually means the overload opened because the machine was pushed too hard, or the gauge plate or knife-reset switch needs attention.
Wedge-shaped slices usually mean the product is unstable or the gauge plate and carriage are out of alignment. A manual slicer that feels hard to push often needs a dull knife replaced, lubrication on the slide rod, or worn bushings. On older units we say plainly when the repair is not worth it, and every repair carries a 30-day warranty on our work.

Why does my Hobart slicer knife stop in the middle of slicing?
The thermal overload may have opened from a heavy load, or the gauge plate or knife-reset switch may not be seated. We check each one and the knife condition before we quote anything.
My automatic HS7 will not start its stroke. What do you check?
We test the auto and manual switch, the harness, the belt, the keypad and the control board. We give you the written price before replacing any of those parts.
Do you service the older Hobart EDGE slicers?
Yes. We repair EDGE12 and EDGE13 slicers still in service. If the cost of parts is more than the machine is worth, we tell you so before starting.
