Pitco Commercial Fryer Error Code Prob: Probe Open Circuit
Prob on a Pitco Solstice digital solid state control is a temperature probe problem. The service manual says to test the probe and check the wires and connectors for continuity, which finds an open circuit. The operator manual calls it an incorrect probe reading.
High: the controller has no valid oil temperature, so it cannot control heating.
What does Pitco error code Prob mean?
The probe tells the controller how hot the oil is. When the controller cannot get a proper reading from the probe circuit, the digital display shows Prob. The service manual treats it as an open-circuit problem and gives the test: check continuity through the probe and through the wires and connectors that run between the probe and the controller. The operator manual puts the same display in plain words as an incorrect probe reading and tells the operator to contact a service company. Because the controller depends on the probe to regulate heat, a missing or wrong reading means the fryer cannot control the oil temperature. Prob here is the open-circuit message; its short-circuit partner on the same control is Prob HI. On a fryer that stays in service all day, the probe lead is flexed, heated and splashed with oil every shift, which is why a cable or connector is as likely a find as the probe element itself, and why the technician tests the whole chain from the probe tip to the controller plug before replacing anything.

What you may notice
- Prob on the digital display
- Fryer not heating or heating unevenly
- Oil temperature reading missing
Possible causes
Likely causes — what usually sits behind error code Prob on this control. A technician confirms which one it is before any part is replaced.
- Probe element failed open
- Probe cable broken at a bend
- Connector pulled loose from the controller
- Cable damaged by heat or oil near the vat
Safe checks before calling for service
- Turn the fryer off and allow the oil to cool.
- Check that the probe plug at the controller is fully seated with the fryer cool.
- Look at the probe cable for visible damage, without pulling it.
- Call us with the model and display.
How a technician diagnoses error code Prob
- Confirm the Prob display and rule out the short-circuit message.
- Test the probe for continuity.
- Test the wires and connectors between the probe and the controller.
- Inspect the cable and plug for damage.
- Replace the probe or wiring and confirm a controlled heat-up.
- The probe is in hot oil and the controller circuits are live.
- Continuity testing is done with the fryer cool and isolated.
How error code Prob differs from similar codes
Prob is the open-circuit probe message on the digital control; Prob HI is the shorted one, and PROBE OP is the computer control version.

What does Prob mean?
The controller cannot get a proper reading from the temperature probe circuit.
Is it the probe or the wiring?
Either. The manual tests both with continuity checks.
Can I keep frying?
No. Without a valid oil temperature the fryer cannot control heating.
