Vulcan Commercial Fryer Error Code HIGH TEMP: Oil Over 415F

HIGH TEMP on a Vulcan PowerFry with the Solid State (D) control means the oil has reached 415F (212C) or more. The control cuts the heat demand, cancels cooking cycles and locks the operator buttons. Switch the fryer off, leave the hot oil alone until it is completely cool, and call us before using the fryer again.

Medium · inspection needed

High: oil at this temperature is a burn and fire risk, and the fryer is locked out.

What does Vulcan HIGH TEMP mean?

The Solid State (D) control reads the oil temperature through the probe in the vat and calls for heat until the set point is reached. As a backstop, it also watches for oil that climbs far past the set point. When the reading reaches 415F (212C) or more, the control treats the vat as unsafe, ends the heat demand, cancels any running cooking cycle and locks the operator buttons. The display shows HIGH TEMP. Oil at that temperature is a burn and fire risk, which is why the response is to stop everything rather than carry on. The cause is not always an actual overheat. A probe that reads low would let the burner run on, a gas valve that stays open would keep heating after the control stops asking, and a problem in the control output could do the same. The cause has to be found before the fryer returns to service.

Affected models and control systems

This applies to Vulcan VK/TR PowerFry gas fryers with the Solid State (D) control, such as the 1TR45, 1VK65 and 2TR85. The same warning on the Computer (C) control reads HIGH TMP.

Code numbers and their meaning can change between control generations. We match the full model and control before acting on a code.

What you may notice

  • HIGH TEMP on the display
  • Heat off and cooking cycle canceled
  • Operator buttons not responding
  • Oil smoking or very hot at the vat

Possible causes

Listed in Vulcan's documentation

  • The temperature probe and how it reads
  • The gas valve closing properly
  • The high limit circuit
  • The control output that calls for heat

Other likely causes — what usually sits behind HIGH TEMP on this control. A technician confirms which one it is before any part is replaced.

  • Probe loosened in its mount so it reads cooler than the oil around the burner
  • Gas valve with debris on its seat that keeps passing gas after the control closes it
  • Oil level run low, leaving the burner area overheated while the probe reads normally

Safe checks before calling for service

✓ What an operator can do
  1. Switch the fryer off.
  2. Leave the oil alone until it has cooled completely; nobody drains, filters or moves hot oil.
  3. Once it is cool, check that the oil level is above the minimum line.
  4. If you smell gas, leave the kitchen and call the gas utility from outside.
  5. Call us before using the fryer again, and tell us how long it had been heating when the message appeared.

How a technician diagnoses HIGH TEMP

  1. Read the message and ask what the fryer was doing when it appeared.
  2. With the oil cool, check the oil level and the position of the probe.
  3. Compare probe resistance with a reference thermometer reading across several temperatures.
  4. Check whether the gas valve closes fully when the control stops calling for heat.
  5. Test the high limit circuit and the control output.
  6. Replace the part that fails the test, then run a heat-up with a thermometer in the oil.
! Leave this to a technician
  • Hot oil above 415F is a burn and fire hazard that no one should handle.
  • The gas valve, high limit and ignition wiring sit behind panels on a gas appliance.
  • Checking probe accuracy needs reference instruments and a heated vat.

How HIGH TEMP differs from similar codes

HIGH TEMP is the Solid State (D) wording; the Computer (C) control prints HIGH TMP for the same condition.

HIGH TEMPQuestions about Vulcan HIGH TEMP
Can I reset it and keep frying?

No. Oil this hot is a hazard, and the cause must be found first.

Is the fryer broken?
