The OV310 is a Baxter mini rotating rack convection oven with a digital control, sold as the OV310E for electric and the OV310G for gas. Some are current and many older units are still in daily use in small bakeries.
The control has a Kosher mode. In Kosher Lockout Mode the display shows LOC OUT, and controls that beep rapidly, faster than the bake timer, signal a temperature alert. For the alert, turn off the VENT if it is on, and on a gas oven check whether the burner is firing. We trace why the heat slipped.
