Repairs this series usually needs

  1. Pressure not building because the lid gasket is worn
  2. High limit tripping after oil overheats
  3. Filtration pump trouble moving oil
  4. Gas models that will not ignite
  5. Probe messages and temperature drift

The 8-head High Volume pressure fryers are the big units built for large-batch frying. Electric versions are labeled PFE-591 or PFE 590, and gas versions PFG-691 or PFG 690. The Computron 8000 is the control on them, and some units in service are far older than others.

A fryer this size moves a lot of oil, so the filtration system and the drain deserve as much attention as the heat. We look at the lid gasket and the pressure seal early, because a pot that cannot hold pressure cooks unevenly and uses more oil. After that we test the probe, the high limit and, on gas units, the ignition.

When an older 8-head unit is worth keeping, we say so. When it is not, we say that too, with the price on paper first.

FAQHenny Penny High Volume 8-Head Pressure Fryers questions
What is the difference between a PFE-591 and a PFE 590?

They are close relatives in the 8-head electric family. The data plate on your fryer tells us exactly which one you have, and we match parts to that number.

Why does my 8-head fryer take longer to come to pressure?

A tired lid gasket is a common cause, as is a problem in the heating system. We inspect the seal first and then the elements or burners.

Is it worth repairing an old 8-head fryer?

Often, since the pot and frame last long. We price the repair in writing, compare it with the age of the unit and tell you plainly where the line is.
