Evolution Elite is the reduced-oil open fryer line from Henny Penny. Electric models carry numbers like EEE 142, and gas models numbers like EEG 243. They are operated from the iControl panel and include Smart Touch filtration and automatic top-off, which add pumps and sensors to the usual fryer parts.
That extra equipment is where we spend time. We check the filtration pump and its lines, the oil-level sensing and the auto top-off along with the heating side. If the display shows a high-limit message, the limit’s reset sits inside the left door of these fryers, so we handle it after the oil has cooled and the cause is clear.
