The 340 series gives kitchens a wider frying surface than the 320. Look for OFE-341 or OFE-342 on electric fryers and OFG-341 or OFG-342 on gas fryers. Variants labeled OEA and OGA belong to the same family.
A wider vat means more oil to heat and more load on the elements or burners, so recovery after a big basket is the first thing kitchens notice slipping. We test the heating side under load, then the probe and high limit. Gas fryers that will not light get an ignition check and a look at the supply, and every drain and switch is checked while the oil is cool.
Older 340 series fryers are still earning their keep in many kitchens. We repair them, quote in writing first and say so if a repair is not worth it.
