The High Volume open fryers are built for kitchens that cook big batches. The electric model is the OFE-291 and the gas model is the OFG-391. Check the data plate for either number, since the two differ in how they heat and light.
On the OFG-391 the burner will not light until the draft fan proves airflow through an air pressure switch, so ignition problems start with the fan, the switch and the tube between them. Probe messages E-6A and E-6B on that model tell us the probe circuit is open or shorted.
On both models we test the high limit and the heating side under load. These are larger fryers with many working years in them, and we tell you plainly when an older one is worth fixing.

It is the gas version of the High Volume open fryer. It has a draft fan and an air pressure switch that must agree before the burner lights, so ignition trouble starts there.
Why does my OFG-391 show E-6A?
The probe circuit is open, so the control has no oil temperature. We test the probe, its connector and the wiring, then the input on the control.
