Right Size is the UltraGold infrared fryer with 65 lb of oil per vat. The data plate shows a model such as B-IR-RS-3-UCP. The number tells you how many vats, and UCP means UltraClear Plus filtration.
With an infrared fryer, the burner surface and ignition are the heart of the job. We check the ignition module, the electrode, gas valve and the gas pressure, then the probe and the high limit. A puff at start-up can mean wrong gas pressure or a cracked electrode.
Keep oil above the minimum fill line, because low oil can trip the limit. With a battery of two to four vats, tell us which vat misbehaves, since each one has its own burner and probe. Gas in the air means going outside and calling the utility. Have the data plate model ready when you call.
