The OV320 is Baxter’s mini rack oven with Smart Touch controls. It comes as the OV320G for gas and the OV320E for electric. Cafes and small bakeries choose it for a compact footprint that still holds a rack.
The touchscreen shows error screens that guide us, and we check the rack rotation, the door seal and the way the oven heats. On the gas model we look at the burner and ignition. The proofer base that sits under some mini ovens is a separate unit, and we check it as its own piece of equipment.
A mini rack oven is often the only oven in a small bakery, so downtime hurts. We give a written price first, and we are plain with you if the touchscreen or burner is past worth repairing.

The G is gas and the E is electric. The data plate shows which one you have, and we use it to confirm the burner or element parts.
What should I write down when the screen shows an error?
The code, its color and what the oven was doing. That tells us which circuit to test before we arrive. Photos of the screen also help us a great deal.
Does the proofer base need separate service?
Yes. A proofer base is its own unit with its own water, heater and thermostat, so we check it separately from the oven above. It also helps us to hear whether both units are affected.
