Common Delfield prep tables problems
In plain words, the way kitchen and laundry staff describe them when they call.
Rail and pans too warm
Lid will not seal on the pan top
Table stopped cooling after an outage
Frost on the evaporator coil
Water under the table base
Delfield prep tables keep cold food within reach of the cook. The 18600 Series tables have a backsplash design with a refrigerated rail, and the CTP-NB rails have their own cold pan. A model number ending in BSTMP or BST-E tells us how your table was built, and the older 400 and 4000 Series tables are still working in many kitchens.
Warm product is the call we get most. We start with the lid, because a lid left up lets the rail warm quickly, then the condenser, the fan and the airflow around the pans. If the table sits dead after a power loss, we check the controller and its power before the sealed system. When we find water, we also check the condensate pan and drain.
The 18600 tables show their settings on a small display, so we read the sensor readings before we guess. Gaskets on the lid and the drawers cost little compared with a replacement table, and when they are torn we change them first.

Should I pre-chill product before putting it in the pans?
Yes. A prep table keeps cold food cold and cannot pull down a warm tub quickly. Load chilled product, and tell us if the rail still warms up.
Does my older Delfield table have a different refrigerant?
Older 18600 tables were built with HFC-404A and newer ones with R290. We check the label before we bring parts, so we have the right ones on hand.
Water collects under my prep table. What causes it?
Usually the condensate pan or its drain. We clear and test them, and look at the coil for ice that melts faster than the pan can handle.
