True Prep Table Repair
We repair True sandwich, salad and pizza prep tables for restaurants, delis and pizzerias in Miami, Los Angeles, Houston, New York and San Diego. We look at the cold rail, the cabinet and the controls, then give you a written price before we begin.
Common True prep tables problems
In plain words, the way kitchen and laundry staff describe them when they call.
Toppings warming up in the rail
Cabinet cold but pans spoiling
Compressor working without enough cooling
Frost behind the rail
Water leaking under the table
The True prep tables we service include TSSU sandwich and salad tables from 27 to 119 inches, TPP pizza prep tables, and TFP food prep tables and TFT flat-top models. Their electronic controls vary with the year the table was built.
A prep table has two jobs at once: the cabinet below must hold temperature, and the rail above must keep pans cold while the lid is up all shift. If toppings turn warm while the cabinet reads cold, we check air flow around the rail, the lid seal and how the pans sit before we suspect the cooling system. Heat from a nearby line and a grease-coated condenser make the problem worse, and so does a hot summer kitchen.
Frost on the evaporator, a drain that backs up and a probe that reads wrong are the other calls we get most often. We test the probe against the resistance chart, clear the drain line and clean the condenser. When a table is old enough that the repair costs more than the table is worth, we say that too.

Why?
The rail depends on air flow and a closed lid. Pans set too high, a worn lid seal or a blocked air path can leave the rail warm while the cabinet reads cold.
Do you repair True pizza prep tables?
Yes. We service TPP pizza prep tables, including versions with drawers, and check the controls, door seals and condenser during the visit.
Where does the water under my prep table come from?
Most often from a clogged drain or a defrost cycle that cannot drain. We clear the line, check the pan and test that the defrost ends properly.
