AccuTemp Steam&Hold Electric Vacuum Steamers
Current line.
Repairs this series usually needs
- Weak vacuum and slow cooking
- Water level board warnings
- Vacuum pump trouble
- Door seal leaks
- Scale on the sensors
Steam&Hold is the AccuTemp steamer that cooks under a vacuum, which lets it steam below 212F and hold food between 100F and 200F. It comes in 3-pan and 6-pan sizes, and an older one may be labeled Steam N Hold II.
Slow cooking tells us to check the vacuum first, because the vacuum gauge should read in the 20s of inches with the chamber ports plugged, and a very low reading points to a weak pump. We also check the door seal, the water level board and its LED, and scale on the sensors.
Let the chamber cool before anyone opens the door. Because cooking happens under vacuum, a small leak can slow every batch, so a clean seal matters.

Why is my Steam&Hold cooking slowly?
A weak vacuum is a common cause, along with a leaking door seal. We test the pump with a gauge and check the seals, then write the price down before replacing anything.
What is the vacuum gauge for?
It shows how well the pump is pulling. With the chamber ports plugged, a healthy gauge reads in the 20s of inches, and a very low reading means the pump or a leak needs attention.
Do you service the Steam N Hold II?
Yes. It is an older name for this steamer family. We repair it, test the vacuum, and put the price on paper before work. A 30-day workmanship warranty covers it.
