AccuTemp Platforms We Service
AccuTemp builds its steamers on a few platforms. The Evolution electric steamers come in three and six pan sizes, connected with autofill or connectionless, single or double stack. Evolution gas and propane steamers add a power burner and a spark ignition module. The Steam&Hold electric steamer, also sold as Steam N Hold II, is a boilerless vacuum steamer that holds food between 100 and 200 degrees F. Edge insulated electric kettles come stationary or tilting. We service all of them.
Water Sensors, Probes and Ignition
On an Evolution steamer, nearly every alarm starts with cleaning the two water sensors. Abrasive pads, steel wool and wire brushes must stay away from them. Scale from hard water coats those sensors, which can stop the unit from filling, cause overfilling, or leave the Low Water light and alarm on. The steamer will not heat with the door open, and one that will not power up may have a High Water light or a stuck float ball.
A reading of -1F or -99F means the temperature probe is not being read correctly, so we test the probe and its connection. On gas Evolution steamers the ignition module LED flashes in patterns that guide us, and the air shutter setting and blower pressure matter as well. On Steam&Hold, slow cooking often comes from a weak vacuum pump, which we check with a gauge.
You get a written price before work, a plain answer when an older steamer is past repair, and a 30-day warranty on our work.

Turn the steamer off and let it cool first. Clean the two sensors without abrasive pads, steel wool or wire brushes. If the alarm returns after cleaning, call us and we will test the water level board.
What does -99F mean on my AccuTemp display?
The control is not reading the temperature probe correctly. The probe, its wiring or the board could be the cause. We test the probe and connection first, then the control, before replacing any part.
Why is my Steam&Hold steamer slow to cook?
A weak vacuum pump is a common reason. We check the vacuum with a gauge and also look at the door seal and water supply. Call us if cook times keep growing.
