The LHD65 is a large-vat gas fryer with a 100 lb oil capacity, rated at 105,000 Btu/hr. Kitchens use it for big batches, so any downtime shows quickly. Find the LHD65 model number on the data plate, and the control is either Thermatron or the 3000.
When an LHD65 recovers slowly, we look at ignition, the gas supply, the probe and the burners. A large vat takes a lot of heat to bring back, so weak flame shows up first. High-limit trips lead us to the probe and the safety circuit.
