The UPT is Traulsen’s compact pizza prep table and the UST is the compact sandwich prep table. Numbers such as UPT276-D, UPT279-D and UPT3212 describe the size and door style. Twenty-four numbers are in the group, and they use a compact controller.
Compact prep tables work in small spaces, which means little air around the condenser and a rail that is opened constantly. We check the condenser first and then the lid, the gasket and the drain. A pizza table collects flour, and flour in the coil is the most common reason for a table that cannot hold temperature.
We confirm the plate number and the control before the visit so we bring the right parts. A lid that sags a few millimeters is enough to warm the front pans, so we also check the hinges and the lid seal before blaming the refrigeration.

UPT is for pizza and UST is for sandwiches. The cabinet is similar, but the rail and work surface differ. The plate tells us which you have.
My table loses temperature at lunch. Why?
The lid is open often, and a clogged condenser cannot keep up. Cleaning the coil and checking the gasket usually helps. Wiping the lid edge each shift also keeps cold air from leaking out.
Is the compact controller different from the larger models?
Yes, it is simpler. We identify it from the plate and check its settings and sensors. Not in every case, so we read the plate and the control before the visit.
