The 1814 is an oil-conserving fryer with an 18 by 14 inch vat that holds 63 lb of oil. It comes in electric and gas, with or without filtration, and the 11814E is one of the model numbers. Several controls are used on this family, from a Digital Timer to the 3000.
Which fryer you have changes what we check. On gas versions we start at ignition and the gas valve; on electric versions at the contactor and elements. On either one the probe and high limit come next, and filtered models add the pad, pump and valves.
An older 1814 may still have good years ahead. If it does not, we tell you so, and we quote the work before starting it.

Its vat is 18 by 14 inches and holds 63 lb of oil, which is where the oil-conserving name comes from. The vat size shows on the data plate and in the model name. It helps us confirm the fryer.
Is my 1814 gas or electric?
Look for a gas line and pilot or ignition parts for gas, and a power cord or hardwire for electric. The data plate also says which.
Do you service the control as well?
Yes. Whether it is a Digital Timer, a CM3.5 or a 3000, we read the display and test the circuit it points to. It saves a repeat visit.
