The VPP is the Victory pizza prep table, and the VPPD has drawers. Twenty-nine numbers are listed, such as VPP46HC, VPP60HC and VPP119HC. They use a Danfoss ERC-type controller that shows Hi, Lo, dOr and LEA.

Flour is the enemy of the condenser. We clean it first, then check the lid, the gaskets and the drawers, then the fans and the controller. A Hi alarm during the rush often clears afterward, and if it does not, the coil or the seals are the next place we look.

Brush the coil monthly to stay ahead of the dust. After the repair we put a thermometer in a pan on the rail and watch it settle, because the rail is the part your food touches.

Why does flour matter so much?

It packs into the condenser fins and blocks airflow, so the compressor runs hot and long. Regular brushing keeps the coil open and the table cold.

What is the VPPD?

It is the drawer version of the table. The cabinet below the rail has drawers instead of doors, so we check the slides and drawer gaskets as well.

How do I know the rail is cold enough?

Put a thermometer in a pan and compare it with your food-safety limits. If the reading is out of range after a rest, call us.
