02What goes wrong

Common bakery ovens problems we fix

In plain words, the way kitchen and laundry staff describe them when they call.

01

Loaves baking unevenly front to back

02

Oven taking much longer to heat

03

Burner or element will not light or glow

04

Steam injection stopped working

05

Door not sealing or hanging crooked

06

Controls showing errors or shutting the oven off

Bakery ovens include deck ovens with stone or steel decks, rack ovens that take a full rolling rack, convection ovens and combination units with steam injection. They may run on gas or electricity and sit in bakeries, restaurants, grocery bake shops, schools and churches that bake in volume.

What wears them down

Steam, heat and humidity are hard on door seals, hinges, fan motors and electronic controls. Hard water leaves scale in steam generators and injection lines, which reduces steam and can clog the lines. Flour dust and grease collect around burners and vents, and outages or surges can damage control boards.

We check the heat source and ignition, the thermostat and limit controls, the fan or circulation, the steam supply, the door seal and hinges, and the exhaust. Uneven baking and slow heat-up each have several possible causes, and what you see cannot name one, so we test before suggesting parts.

Repair or replace, and what to have ready

If the chamber, frame and deck are sound, repairing a burner, element or control is usually worthwhile. If the chamber is warped or cracked, or parts are no longer made, we explain the options. Have the model label ready when you call.

Please do not bypass limit controls, light a gas oven by hand or open the burner area yourself.

FAQBakery Oven questions
Why does my bakery oven bake unevenly?

Uneven baking can come from a weak burner or element, a failing fan, a leaking door seal or a thermostat that reads wrong. A pattern alone does not tell us which, so we test heat, airflow and the door before recommending a repair.

What do I do if I smell gas?

Leave the building, do not touch switches, and call your gas utility from outside. Once the utility clears it, call us to inspect the oven. New gas lines and connections are done by a licensed plumber.

Do you repair older bakery ovens?

Yes. Many bakery ovens last for decades. We check the heat source, controls, fan, steam system and door, give a written price before work, and say honestly if the oven is past a sensible repair.
