Common prep tables problems we fix
In plain words, the way kitchen and laundry staff describe them when they call.
Rail food will not stay cold
Lids and doors sealing poorly
Compressor runs but table is warm
Condensate overflowing the pan
Top rail frosting over
Cold air on one side only
A cold rail in a hot kitchen
A refrigerated prep table holds food pans on a cooled rail above a base with doors or drawers. Sandwich and salad tables, pizza tables with marble or granite tops, and undercounter prep units all sit beside fryers, ovens and flat tops.
That location causes most service calls. Heat from the line loads the condenser, and grease and flour dust settle on the coil. Humid air in Miami and Houston adds condensate that must drain, and lids opened hundreds of times a day lose their seal long before the cabinet wears out. Tight New York prep lines leave very little airflow around the unit.
Our first checks
We check the condenser coil and fan, the evaporator fan and airflow to the rail, lid and door gaskets, the drain and the controller, and only then the sealed system. Pans, lids and loading habits all affect the rail, so we also look at how the table is used.
On an older table we are direct about repair or replace. A fan motor, gasket set or controller is usually a sensible fix, while a damaged liner or a refrigerant leak may not be. Please do not pour hot water into the pan area or poke at the coil, and keep the model label handy.
Prep tables codes by maker
The same characters mean different things on different makers and controls, so pick yours first.

The rail is cooled by air from the evaporator, so weak airflow, an overfilled pan area, a poor lid seal or a dirty condenser can each be the cause. We check airflow and cleanliness first, then the refrigeration.
The cabinet is cold but the rail is not. Why?
That split often means the air path to the rail is blocked, a fan is weak or the lid gaskets leak. It is not always a refrigeration problem, so we test each part before recommending a repair.
What should I tell you when I book?
The model and serial number from the data plate, whether the table is a sandwich, salad or pizza style, and what you see: warm product, frost or water. Call us or send the online form, and we confirm a three-hour arrival window.
